The ski loaf, and why it exists
It does not crush, it does not dry out before evening, and it holds you until the last run.
It came from a customer's remark, one February morning: "your baguette, in the backpack, by noon it is crumbs."
What we changed
A tighter crumb, toasted seeds, a thicker crust. It still slices in the evening, which a baguette does not.
When to get it
It comes out at seven. On bluebird days there is none left by nine.
